Winter Kale Salad (LC)

Winter Kale Salad

Ingredients

  • 1 large bowl of kale, rinsed, dried, stems removed, leaves thinly sliced
  • ½ tsp olive oil
  • ½ small avocado (or ¼ large), sliced
  • ½ red onion, sliced
  • 30g feta cheese, crumbled
  • 30g cranberries
  • 30g walnuts or pecans, chopped

Honey & Dijon Dressing:

  • 1 tsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 2 tsp water
  • Black pepper, for seasoning

Instructions

  1. Combine all dressing ingredients in a bowl and whisk until smooth, or shake together in a jar. Taste test and adjust the seasoning if needed.

  2. Add the kale to a large bowl, drizzle over the olive oil and massage with your hands until they become soft.

  3. Add the avocado and red onion.

  4. Drizzle over the dressing and toss gently.

  5. Transfer to a serving dish and sprinkle over the feta cheese, cranberries and chopped nuts.

Note - You can add any additional meat (cooked chicken, ham etc.) or salad vegetables you have available.
