Caramelised Banana Porridge
Ingredients
- 40g porridge oats
- 1 tbsp ground flaxseed
- 135ml milk (of your choice)
- ½ tsp olive oil
- 1 banana, sliced
- 1 tsp honey (or maple syrup)
- ¼ tsp cinnamon
- 1 tbsp mixed seeds (sunflower or pumpkin seeds)
- 30g walnuts, chopped
Instructions
In a small saucepan, combine the oats, ground flaxseed and milk.
Place over medium heat and cook, stirring occasionally, until the mixture begins to thicken, about 5-10 minutes or until the oats are cooked to your liking.
Heat the olive oil in a frying pan over medium heat. Add the banana slices and sauté for 1 minute.
Add the honey and cinnamon, and stir to combine. Cook for 3-4 minutes.
Add the porridge to the bottom of the bowl, top with the caramelised banana and a sprinkle of mixed seeds and walnuts.
