Caramelised Banana Porridge

Caramelised Banana Porridge

Ingredients

  • 40g porridge oats
  • 1 tbsp ground flaxseed
  • 135ml milk (of your choice)
  • ½ tsp olive oil
  • 1 banana, sliced
  • 1 tsp honey (or maple syrup)
  • ¼ tsp cinnamon
  • 1 tbsp mixed seeds (sunflower or pumpkin seeds)
  • 30g walnuts, chopped

Instructions

  1. In a small saucepan, combine the oats, ground flaxseed and milk.

  2. Place over medium heat and cook, stirring occasionally, until the mixture begins to thicken, about 5-10 minutes or until the oats are cooked to your liking.

  3. Heat the olive oil in a frying pan over medium heat. Add the banana slices and sauté for 1 minute.

  4. Add the honey and cinnamon, and stir to combine. Cook for 3-4 minutes.

  5. Add the porridge to the bottom of the bowl, top with the caramelised banana and a sprinkle of mixed seeds and walnuts.
