Preppable Chicken Pesto

Ingredients

  • 2 tbsp full-fat Greek yoghurt
  • 1 tbsp mayonnaise
  • 1 heaped tbsp pesto
  • Black pepper for seasoning
  • Approx 200g roast/cooked chicken, shredded or diced

To serve (per portion):

  • 1 tomato, sliced
  • 1-2 cooked beetroot, sliced
  • ½ cucumber sliced
  • Large handful of rocket (or any mixed salad)

Instructions

  1. Add the Greek yoghurt, mayonnaise, pesto and a pinch of black pepper to a mixing bowl.

  2. Mix well until fully combined.

  3. Add the chicken, taste and adjust seasoning with black pepper as desired.

  4. To serve, add the chicken pesto to a bowl with the tomato, beetroot, cucumber and rocket.

Note - The chicken pesto mix makes 2 portions. Store the remaining mixture in the fridge for 3-4 days.
