Low Carb Crackers + Toppings (LC)
Ingredients
- 50g chia seeds
- 190g mixed seeds (flax seed/linseed, pumpkin, sunflower, sesame seeds)
- ½ tsp salt
- 1 tsp dried oregano
- 175ml cold water
Toppings (per serving):
Cream cheese + smoked salmon:
- 1 tsp cream cheese
- 55g smoked salmon
Cheese + tomato:
- 30g cheese, sliced
- 1-2 tomatoes, sliced
Egg Mayo (serves 3-4):
- 8 boiled eggs, peeled
- ½ red onion, finely diced
- Bunch of fresh parsley (optional)
- 2 tbsp Greek yoghurt
- 1 heaped tbsp mayonnaise
- 1 tbsp whole grain mustard (or less if using English mustard)
- Black pepper to taste (and a pinch of salt if preferred)
Instructions
For Crackers:
Add the chia seeds, mixed seeds, salt, oregano and water to a large bowl and stir well. Set aside for 20 minutes.
Preheat the oven to 170°C and line a baking sheet with baking paper.
Once the mixture has turned gel-like and absorbed the water, stir well and spread onto the baking paper.
Score the mixture with a fork.
Bake in the oven for 55-65 minutes or until lightly browned. If browning too quickly, lower the temperature to 160°C.
Once the crackers are completely dry, remove from the oven.
While warm, slice into 9 large crackers.
Allow to cool and store in an airtight container.
Before serving you can also place the crackers back into the oven for a few minutes if you’d like them extra crispy (or if they have gone a little soft).
For Egg Mayo topping:
Chop the boiled eggs to your preferred texture (chunky or finely mashed).
Add the red onion and parsley (if using).
Mix in the Greek yoghurt, mayonnaise, and mustard.
Season with black pepper (and salt, if desired).
Stir well to combine, then taste and adjust seasoning as needed.
If making in advance, add fresh parsley just before serving.
To Serve:
Add your chosen topping to the crackers and enjoy.
Note - This recipe makes 9 large crackers, a portion is 2–3 crackers. Store any leftovers in an airtight container for up to 5 days.
The Egg Mayo recipe makes 3-4 portions. Store the remainder in the fridge for 3-4 days.
