Smoked Salmon + Avocado Breakfast Bowl

Ingredients

  • 2 eggs
  • 1 slice sourdough bread (or any bread)
  • 1 tsp unsalted butter
  • ½ small avocado (or ¼ large)
  • 55g smoked salmon
  • 1 tomato, quartered
  • Handful of rocket
  • 1 tbsp picked red onions (optional)
  • Pinch of black pepper

Instructions

  1. Bring a saucepan of water to a gentle simmer. Crack each egg into a small cup, then gently slide them into the water. Poach for 2½–3 minutes, or until the whites are set but the yolks remain soft (or cook to your preference).

  2. Toast the bread and spread with the butter.

  3. Assemble the bowl by adding the eggs, avocado, salmon, tomato, rocket and toast.

  4. Add the pickled red onion (if using) and a sprinkle of black pepper and enjoy!
