Breakfast Bagels

Breakfast Bagels

Ingredients

  • 1-2 eggs
  • 1 bagel thin, halved
  • Handful of spinach (or any salad leaves)
  • ½ small avocado (or ¼ large), sliced
  • 1 tomato, sliced
  • Black pepper, for seasoning

Instructions

  1. Cook the egg(s) to your liking.

  2. Toast the bagel to your liking.

  3. Add the spinach, avocado and tomatoes to the bagel and add the egg(s).

  4. Sprinkle with black pepper and top with the other bagel half.

Note - Any style of eggs will work here, fried, scrambled, poached or even an omelette made with the tomato and spinach.
