Veggie Stuffed Airfryer Peppers

Ingredients

  • ½ red onion, diced
  • ½ sm courgette, diced
  • 2 small tomatoes, diced
  • 30g cheese, grated
  • Black pepper for seasoning
  • ½ tsp italian herbs
  • ½ tsp paprika
  • 1 tbsp tomato puree
  • 1 tsp olive oil
  • 1 whole pepper

Serving suggestion:

  • 1 tbsp coleslaw
  • Large handful of rocket and or any salad ingredients

Instructions

  1. Place the red onion, courgette and tomatoes into a bowl and add the grated cheese (reserve a small amount for topping).

  2. Season with black pepper, Italian herbs and paprika.

  3. Add the tomato puree and olive oil, then mix everything together until the vegetables are well coated.

  4. Slice the whole pepper in half lengthways and remove the seeds.

  5. Spoon the vegetable mixture evenly into each half of the pepper.

  6. Sprinkle the remaining cheese over the top.

  7. Place the stuffed pepper halves into the air fryer basket.

  8. Cook at 180°C for 12–15 minutes in the airfryer. Or cook in a preheated oven at 180°C (fan) for 18–22 minutes, until the pepper has softened and the cheese on top is melted and lightly golden.

  9. Remove from the air fryer, serve warm with any of the serving suggestions above.
