Granola Topped Baked Peaches

Ingredients

  • 1 tsp butter
  • Pinch of cinnamon
  • 1 large fresh peach, stoned and halved
  • 1 tsp honey
  • 1 tbsp no added sugar muesli (or granola)
  • 125g full-fat Greek yoghurt

Instructions

  1. Place a small frying pan over a medium heat and add the butter. Swirl to coat the base of the pan.

  2. Sprinkle in the cinnamon and let it infuse for a few seconds.

  3. Add the peach cut-side down and cook for about 1 minute until they begin to soften and release their juices.

  4. Drizzle over the honey. Gently turn the peaches to coat. Cook for another 2–3 minutes until golden, sticky and lightly caramelised.

  5. Fill the centre of each peach half with a spoonful of granola and cook for 2–3 minutes until heated through.

  6. Remove from the heat and allow to cool slightly.

  7. Spoon the Greek yoghurt into a shallow bowl and top with the peaches.
