Tuna Cucumber Boats+ Salad (LC)

Ingredients

  • ½ cucumber
  • 1 small can of tuna, drained (approx. 70g)
  • ½ spring onion, finely sliced
  • 10g red pepper, finely diced
  • 2 tbsp Greek yoghurt
  • 1 heaped tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp paprika powder
  • Pinch of black pepper, to taste
  • ¼ tsp sesame seeds, for topping
  • ½ tsp sriracha or hot sauce (optional)
  • Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)

Instructions

  1. Slice the cucumber in half lengthways, scoop out the centre with a spoon.

  2. Add the tuna, spring onion, red pepper, yoghurt, mayonnaise, mustard, paprika and black pepper to a bowl and mix well until combined.

  3. Taste test and adjust the seasoning or spices if required.

  4. Spoon the tuna mixture into the cucumber boats

  5. Sprinkle with sesame seeds and finish with a drizzle of sriracha or hot sauce, if using.

  6. Serve alongside the fresh salad and enjoy!
