Tuna Cucumber Boats+ Salad (LC)
Ingredients
- ½ cucumber
- 1 small can of tuna, drained (approx. 70g)
- ½ spring onion, finely sliced
- 10g red pepper, finely diced
- 2 tbsp Greek yoghurt
- 1 heaped tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp paprika powder
- Pinch of black pepper, to taste
- ¼ tsp sesame seeds, for topping
- ½ tsp sriracha or hot sauce (optional)
- Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
Instructions
- Slice the cucumber in half lengthways, scoop out the centre with a spoon. 
- Add the tuna, spring onion, red pepper, yoghurt, mayonnaise, mustard, paprika and black pepper to a bowl and mix well until combined. 
- Taste test and adjust the seasoning or spices if required. 
- Spoon the tuna mixture into the cucumber boats 
- Sprinkle with sesame seeds and finish with a drizzle of sriracha or hot sauce, if using. 
- Serve alongside the fresh salad and enjoy!
