Blueberry Baked Weetabix

Ingredients

  • ½ tsp butter

  • 4 Weetabix

  • 1 banana, chopped

  • 1 egg

  • 125ml milk (of your choice)

  • ½ tsp baking powder

  • 2 tsp honey (or maple syrup)

  • 1 tsp cinnamon

  • 15 blueberries, fresh or frozen

Serving suggestion (per portion):

  • 1 tbsp full-fat Greek yoghurt

  • 8 blueberries

Instructions

  1. Preheat the oven to 180°C fan and grease a small baking dish (or two ramekins) with the butter.

  2. Crush the Weetabix in a small bowl using your hands or the back of a spoon until it forms fine crumbs.

  3. Add the Weetabix and the remaining ingredients except the blueberries into a blender and blitz until smooth.

  4. Pour the mixture into the prepared dish and scatter the blueberries on top.

  5. Bake for 30 minutes until set and lightly golden. It will still be soft/moist in the middle.

  6. Take out, allow to cool and then slice in two (if using a baking dish).

  7. Enjoy warm or cold with a spoonful of Greek yoghurt and extra blueberries.
