Veggie Air Fryer Burrito (HC)
Ingredients
1 tsp olive oil
½ onion, diced
½ pepper, diced
5-6 mushrooms, diced
3 tbsp black beans
1 tsp garlic powder
Pinch of cayenne pepper
1 tsp coriander
1 tsp cumin
1 tsp paprika
1 tsp oregano
1 tsp tomato puree
3 tbsp tomato salsa
Black pepper to taste
1 large wholemeal tortilla wrap
Handful of spinach
30g cheese, grated
6 pieces jalapenos (optional)
1 heaped tsp mayo or chilli mayo
Instructions
In a frying pan, add the olive oil, onion, pepper and mushrooms.
Sauté for a few minutes, then add the black beans, garlic, cayenne pepper, coriander, cumin, paprika, oregano, tomato puree, 2 tbsp of salsa and season with black pepper.
Mix and ensure everything is coated in the flavours. Cook for another 2 minutes to ensure the flavours are infused. Taste test and adjust the seasoning if necessary.
Place the wrap flat on a clean surface. Add the spinach to the wrap, then spoon the mixture into the centre, leaving some space around the edges so it can fold easily.
Top the mixture with half of the cheese.
Fold the top of the wrap down, then the left and right sides of the wrap toward the centre and finally fold the bottom of the wrap up to cover the filling.
Roll the wrap over the filling, keeping it tight but not overstuffed, and place the seam on the bottom so it stays closed.
Add the remaining 1 tablespoon of salsa on the top of the burrito and the remaining cheese.
Place the burrito seam-side down in the air fryer basket, cook for around 8-10 minutes at 180 degrees.
Once the burrito is ready, it should look crispy. Place onto a plate, top with jalapenos and chilli mayo.
Batch Cooking Tip: This recipe is perfect for batch cooking! To make multiple burritos, simply increase the beans, vegetables, salsa, cheese, and wraps according to how many you’d like to prepare.
When scaling up the spices, start with about 1.5× the amount when doubling the recipe, then adjust to taste – it’s easier to add more seasoning later than to take it away.
You can cook the filling in a larger pan, then assemble burritos and either air fry them straight away or wrap them individually in foil to store. Keep in the fridge for up to 3 days or freeze for up to 2 months. Reheat from chilled in the air fryer or oven until hot and crispy.
