Salmon, Potato and Green Bean Tray Bake (HC)
Ingredients
- 2 salmon fillets, 110g each
- 300g new potatoes, halved
- 2 tsp mixed herbs
- 2 garlic cloves, crushed
- 2 slices of lemon
- 1 tbsp fresh parsley, finely chopped
- Salt and pepper
- 2 tsp olive oil
Instructions:
- Preheat oven to 200c. 
- Mix together 1 tsp olive oil with potatoes, mixed herbs, salt and pepper. 
- Place evenly onto a lined baking dish and put the straight into the oven for 10 minutes. 
- Mix together crushed garlic and fresh parsley with 1 tsp of olive oil and rub into the salmon. 
- Take the baking tray out of the oven and add salmon to the tray. 
- Top salmon with lemon slices. 
- Place into the oven for 5 minutes. 
- Take out of the oven and add green beans, season with salt and pepper. 
- Place back into the oven for 10 minutes. 
- Top with fresh parsley and a squeeze of lemon. 
Top Tip
The recipe makes 2 portions, save the second portion for another day, stored tightly covered in the refrigerator for 2-3 days.
