Greek Couscous and Halloumi (HC)
Ingredients
- ½ red pepper
- ½ onion
- 4 mushrooms
- 1 teaspoon olive oil
- 80g spinach leaves
- 70g green beans
- 70g Halloumi
- 40g couscous
- 1 teaspoon dill
- 1 teaspoon oregano
- 1 tablespoon lemon juice
- 30g feta
- 1 tablespoon hummus
Instructions:
- Turn on the grill. 
- Add the peppers, onion and mushrooms to a frying pan with a little olive oil and allow to cook for 10 mins or so. 
- Add spinach near the end of cooking time, just enough to wilt. 
- Boil some green beans. 
- Slice halloumi and place under the grill, grill for around 3 minutes on each side. Keep - checking in case it burns. 
- Prepare couscous according to the instructions on the pack. 
- When couscous is ready add some dill, oregano, lemon juice and feta. 
- Mix around. 
- When green beans and veg are ready add to the couscous. 
- Mix around, place halloumi on the side and serve with hummus.
