Prosciutto Salad (LC)

Prosciutto Salad

Ingredients

  • 2 handfuls rocket (or mixed salad leaves)
  • 6 cherry tomatoes, halved
  • ½ red onion, finely sliced
  • 2 slices prosciutto, torn
  • 30g pecorino cheese, grated
  • 2 boiled eggs (optional)

Dressing:

  • 1 heaped tsp olive oil
  • 1 tbsp balsamic vinegar
  • Squeeze of lemon juice
  • Black pepper, to taste

Instructions

  1. In a bowl, combine the rocket, cherry tomatoes and red onion. Add the olive oil, balsamic vinegar, lemon juice and black pepper.

  2. Toss well to coat.

  3. Top with prosciutto, pecorino and boiled eggs if using.

  4. Serve immediately.

Note: No pecorino? Swap for another cheese, parmesan works really well. No prosciutto? Use any other ham or a protein of your choice.
