Low Carb Stuffed Peppers + Tuna (LC)
Ingredients
- 1 whole pepper
- 1 tin of tuna, in water or brine, drained (approx. 145g)
- ½ red onion
- 2 tbsp tinned sweetcorn
- 1 tbsp Greek yoghurt
- 1 heaped tsp mayonnaise
- Black pepper, to taste
- 1 tsp paprika powder
- Squeeze of lemon juice (optional)
- 30g cheddar cheese, grated (optional)
- Large handful of rocket and or any salad ingredients
Instructions
Preheat the air fryer to 180°C or the oven to 180°C (fan).
Slice the pepper in half lengthways and remove the seeds.
Place the pepper halves into the air fryer basket or onto a baking tray.
Air fryer: Cook for 12–15 minutes. Oven: Cook for 18–22 minutes. Cook until softened but still holding shape
Meanwhile, in a bowl, combine the tuna, red onion, sweetcorn, Greek yoghurt and mayonnaise. Season with black pepper, paprika, lemon juice and mix well.
Taste test and adjust seasoning if needed.
Once the peppers are cooked, remove from the air fryer or oven and spoon the tuna mixture evenly into each half.
Top with grated cheese (optional) and serve with additional salad on the side.
