Pistachio Overnight Oats

Ingredients

  • 30g pistachios, chopped
  • 125ml semi-skimmed milk (or preferred choice)
  • 1 tsp honey
  • 40g porridge oats
  • 1 tsp chia seeds
  • 1 tbsp full-fat Greek yoghurt
  • 10 raspberries

Instructions

  1. Add the pistachios (reserve 1 tsp for topping), milk and honey to a blender or food processor and blitz until mostly smooth.

  2. Pour the mixture into a container and add the oats, chai seeds and yoghurt. Stir well.

  3. Cover with a lid and place in the fridge overnight.

  4. To serve, take the overnight oats out of the fridge and top with remaining pistachios and raspberries.
