Summer Fruits Crumble

Ingredients

  • 40g oats
  • 2 tsp ground flaxseeds
  • 1 tsp flaked almonds
  • 5g butter
  • 1-2 tbsp water
  • 100g fresh peach, sliced or tinned peach slices (in fruit juice)
  • 60g blueberries
  • 1 tsp maple syrup (or honey)
  • 2 tbsp full-fat Greek yoghurt

Instructions

  1. Preheat the oven to 180°C.

  2. Mix the oats, ground flaxseeds, flaked almonds and butter in a small bowl, and add a little water if needed.

  3. Bring it together to a soft crumble texture.

  4. Place the peaches, blueberries and maple syrup in the bottom of an oven-proof dish and mix well.

  5. Top with crumble mix.

  6. Bake in the oven for 20-25 minutes until golden. Allow to cool slightly before serving. 

  7. Top with a dollop of Greek yoghurt.
