Nando’s Peri Peri Chicken Salad (LC)
Ingredients
- Approx 200g roast chicken
- 4 tbsp sweetcorn
- 1-2 spring onions
- ½ red pepper
- 2 tbsp full-fat Greek yoghurt
- 1 tbsp mayonnaise
- 1-2 tbsp Nando's peri peri sauce
- 1 tsp paprika powder
- Black pepper for seasoning
- Squeeze of lemon juice (optional)
Instructions
Add all ingredients to a large bowl
Mix well until fully combined.
Taste, adjust seasoning or spice, and serve.

Have as a high carb dinner with pasta (60g uncooked) and balance with a low carb lunch
