Nando’s Peri Peri Chicken Salad (LC)

Ingredients

  • Approx 200g roast chicken

  • 4 tbsp sweetcorn

  • 1-2 spring onions

  • ½ red pepper

  • 2 tbsp full-fat Greek yoghurt

  • 1 tbsp mayonnaise 

  • 1-2 tbsp Nando's peri peri sauce

  • 1 tsp paprika powder

  • Black pepper for seasoning 

  • Squeeze of lemon juice (optional)

Instructions

  1. Add all ingredients to a large bowl

  2. Mix well until fully combined.

  3. Taste, adjust seasoning or spice, and serve.


Note: Using The WLA Formula?

Have as a low carb lunch with salad balance with high carb dinner OR

Have as a high carb dinner with pasta (60g uncooked) and balance with a low carb lunch
