Healthy Rocky Road

Ingredients

  • 50g oatcakes / rice cakes

  • 25g mixed seeds (pumpkin / sunflower)

  • 25g mixed dried fruit (apricot / cranberry / goji berry)

  • 50g dark chocolate

  • ½ tsp crunchy peanut butter

  • ½ tsp coconut oil (melted)

  • ½ tsp runny honey

Instructions

  1. Line a baking dish (approx. 3” x 5”) with greaseproof paper or use 6 individual cupcake / 1.5” brownie moulds.

  2. Place the oatcakes / rice cakes into a sealed food bag and beat with a rolling pin until some are powder and others are 1 cm chunks, you want a variety of shapes and sizes.

  3. Roughly chop seeds and dried fruit, again you want a variety of shapes and sizes.

  4. Melt chocolate, peanut butter and coconut oil in short 10-20 second bursts in the microwave or in a bowl over a pan of boiling water, stirring regularly until completely melted.

  5. Stir the honey, oatcakes, seeds and dried fruit into the chocolate mixture and mix well.

  6. Spoon the mixture into the lined tray / moulds and press down firmly.

  7. Set aside to cool and cut into 6 pieces or pop out moulds.

    Note: The recipe makes 6 portions. Store in an airtight container for up to 5 days or pop in the freezer.
