Healthy Rocky Road
Ingredients
- 50g oatcakes / rice cakes
- 25g mixed seeds (pumpkin / sunflower)
- 25g mixed dried fruit (apricot / cranberry / goji berry)
- 50g dark chocolate
- ½ tsp crunchy peanut butter
- ½ tsp coconut oil (melted)
- ½ tsp runny honey
Instructions
- Line a baking dish (approx. 3” x 5”) with greaseproof paper or use 6 individual cupcake / 1.5” brownie moulds. 
- Place the oatcakes / rice cakes into a sealed food bag and beat with a rolling pin until some are powder and others are 1 cm chunks, you want a variety of shapes and sizes. 
- Roughly chop seeds and dried fruit, again you want a variety of shapes and sizes. 
- Melt chocolate, peanut butter and coconut oil in short 10-20 second bursts in the microwave or in a bowl over a pan of boiling water, stirring regularly until completely melted. 
- Stir the honey, oatcakes, seeds and dried fruit into the chocolate mixture and mix well. 
- Spoon the mixture into the lined tray / moulds and press down firmly. 
- Set aside to cool and cut into 6 pieces or pop out moulds. - Note: The recipe makes 6 portions. Store in an airtight container for up to 5 days or pop in the freezer.
