Mince Pie Crumble
Ingredients
- 120g porridge oats
- 1 heaped tbsp ground flaxseeds
- 2 heaped tbsp mixed seeds (sunflower or pumpkin seeds)
- 2 heaped tbsp mixed nuts (of your choice: pecans, walnuts, almonds), chopped
- 3 tbsp honey (or maple syrup)
- 15g butter
- 1-2 tbsp water (optional)
- 3 apples, cored and cut into chunks
- 3 pears, cored and cut into chunks
- 4 heaped tbsp mixed dried fruit (sultanas, cranberries)
- Juice and zest of 1 orange
- 1 heaped tsp ground cinnamon
- 1 tsp mixed spice
Serving suggestion (per portion):
- 2 tbsp full-fat Greek yoghurt
Instructions
Preheat the oven to 180°C.
Mix the porridge oats, ground flaxseeds, mixed seeds, chopped nuts, 1 tbsp honey and butter in a small bowl. Add a little water if needed. Best to mix the butter into the mixture by using your hands.
Bring it together to a soft crumble texture.
Place the apple, pear, mixed dried fruit, remaining honey, orange juice and zest, cinnamon and mixed spice in the bottom of an oven-proof dish and mix well.
Top with crumble mix.
Bake for 20–25 minutes, until the crumble is golden and the fruit is tender but still holds its shape.
Allow to cool slightly and serve with a dollop of Greek yoghurt.
Note - This recipe serves 6 and can be stored in the fridge for up to 3 days. It’s a great batch-cooking recipe and can also be enjoyed as a snack. If you prefer, you can halve the recipe to make 3 portions.
