Leftover Christmas Dinner

Ingredients

  • 160g potatoes, peeled and halved *
  • 1 heaped tsp butter
  • 1 tbsp milk (of your choice)
  • Salt for seasoning
  • Black pepper for seasoning
  • 150ml water
  • 1 tbsp of low sodium gravy granules
  • 100g cooked Christmas meat (turkey, ham or vegetarian alternative)
  • 150g leftover cooked vegetables (Brussel sprouts, carrots, cabbage, broccoli)
  • 2-3 cooked cocktail sausages (or vegetarian alternative)
  • 2 tbsp stuffing (homemade or shop bought)
  • 1 tbsp cranberry sauce

Instructions

  1. Boil the potatoes in water until tender. Drain and mash with butter, milk and a pinch of salt and pepper. Set aside.

  2. Make the gravy by mixing the boiling water with the gravy granules in a heat-proof jug. Stir until smooth.

  3. Reheat the Christmas meat, vegetables, sausages and stuffing gently in a pan or microwave.

  4. Serve the mashed potatoes topped with gravy, then add the meat, vegetables, sausages, stuffing and a dollop of cranberry sauce on the side.

Note - If you prefer, you can leave the skins on the potatoes.

This recipe is flexible - use any leftover Christmas meats or vegetables you have available.
