Leftover Christmas Dinner (HC)
Ingredients
- 160g potatoes, peeled and halved *
- 1 heaped tsp butter
- 1 tbsp milk (of your choice)
- Salt for seasoning
- Black pepper for seasoning
- 150ml water
- 1 tbsp of low sodium gravy granules
- 100g cooked Christmas meat (turkey, ham or vegetarian alternative)
- 150g leftover cooked vegetables (Brussel sprouts, carrots, cabbage, broccoli)
- 2-3 cooked cocktail sausages (or vegetarian alternative)
- 2 tbsp stuffing (homemade or shop bought)
- 1 tbsp cranberry sauce
Instructions
Boil the potatoes in water until tender. Drain and mash with butter, milk and a pinch of salt and pepper. Set aside.
Make the gravy by mixing the boiling water with the gravy granules in a heat-proof jug. Stir until smooth.
Reheat the Christmas meat, vegetables, sausages and stuffing gently in a pan or microwave.
Serve the mashed potatoes topped with gravy, then add the meat, vegetables, sausages, stuffing and a dollop of cranberry sauce on the side.
Note - If you prefer, you can leave the skins on the potatoes.
This recipe is flexible - use any leftover Christmas meats or vegetables you have available.
