Smoked Salmon, Scrambled Eggs & Avocado

Ingredients

  • 2 eggs
  • Pinch of black pepper, to taste
  • 1 tsp unsalted butter
  • 55g smoked salmon
  • ½ small avocado (or ¼ large), mashed or sliced
  • Pinch of chilli flakes (optional)
  • 1 tbsp fresh chives, chopped (optional)

Instructions

  1. Crack the eggs into a bowl, season with black pepper and beat lightly.

  2. Heat a non-stick pan over medium heat and add the butter.

  3. Pour in the eggs and stir gently until just set and softly scrambled.

  4. Plate the scrambled eggs with the smoked salmon and avocado.

  5. Sprinkle over the chilli flakes and chives, if using, and add a little extra black pepper to taste.
