Festive Loaded Fries

Ingredients

  • 160g potatoes, cut into chips (or frozen chips)
  • ½ carrot, cut into batons
  • ½ parship, cut into batons
  • 1 tsp olive oil
  • Black pepper, for seasoning
  • ½ onion, sliced
  • 150ml water
  • 1 tbsp of low sodium gravy granules
  • 100g cooked Christmas meat (turkey, ham or vegetarian alternative)
  • 2-3 cooked cocktail sausages (or vegetarian alternative)
  • 2 tbsp stuffing (homemade or shop bought)
  • 1 tbsp cranberry sauce

Instructions

  1. Preheat the oven or air fryer to 200°C.

  2. Toss the potatoes, carrot, and parsnip with ½ tsp olive oil and a pinch of black pepper.

  3. Place on a baking tray or in the air fryer basket and cook for 30-35 minutes, shaking or turning halfway through, until golden brown and soft in the middle.

  4. While the vegetables are cooking, heat ½ tsp olive oil in a frying pan and sauté the sliced onion for 5–6 minutes, until soft.

  5. Prepare the gravy by mixing the water and gravy granules in a heatproof jug, then pour over the onions and heat through until thickened.

  6. Warm the cooked Christmas meat, cocktail sausages and stuffing.

  7. Assemble the loaded fries by placing the cooked chips and vegetables on a plate, topping with the meat, sausages, stuffing, and onion gravy.

  8. Add the cranberry sauce and serve immediately.

Note - This recipe is flexible. Use whatever leftover cooked meat or vegetable you have.
