Lazy Snacky Plate (HC)
Ingredients
- ¼ Spanish tortilla (shop bought)
- Large handful of rocket
- 1 tomato, sliced
- 4 slices roasted peppers
- 1 tbsp pickled red onions
- 4-5 slices of pickled beetroot
- 1 tbsp coleslaw
- ¼ large or ½ small avocado
- 30g cheese, grated
Instructions
Heat the Spanish tortilla in a pan until warmed through.
Add the rocket, sliced tomato, roasted peppers, pickled red onions, pickled beetroot, coleslaw, avocado and cheese to a plate.
Add the cooked Spanish tortilla on the side and serve.
Note - This recipe serves 1 and is best enjoyed fresh. You can swap the tortilla for ¼ of a quiche or another protein option such as chicken, tuna, eggs or halloumi depending on what you have available.
