Lazy Snacky Plate

Ingredients

  • ¼ Spanish tortilla (shop bought)
  • Large handful of rocket
  • 1 tomato, sliced
  • 4 slices roasted peppers
  • 1 tbsp pickled red onions
  • 4-5 slices of pickled beetroot
  • 1 tbsp coleslaw
  • ¼ large or ½ small avocado
  • 30g cheese, grated

Instructions

  1. Heat the Spanish tortilla in a pan until warmed through.

  2. Add the rocket, sliced tomato, roasted peppers, pickled red onions, pickled beetroot, coleslaw, avocado and cheese to a plate.

  3. Add the cooked Spanish tortilla on the side and serve.

Note - This recipe serves 1 and is best enjoyed fresh. You can swap the tortilla for ¼ of a quiche or another protein option such as chicken, tuna, eggs or halloumi depending on what you have available.
