Protein Packed Porridge

Ingredients

  • 40g porridge oats
  • 135ml milk (of your choice)
  • 1 egg
  • 1 tsp honey
  • 1 tsp mixed seeds
  • 1 tsp peanut butter
  • 1-2 tbsp full fat Greek yoghurt
  • Fruit of your choice

Instructions

  1. Add the oats and milk to a saucepan and cook over a medium heat, stirring occasionally.

  2. Crack the egg into a separate bowl and beat well.

  3. Once the oats begin to thicken, gradually pour in the beaten egg, stirring continuously until fully combined. Cook for a further 2–3 minutes until thick and creamy.

  4. Remove from the heat and stir in the honey.

  5. Transfer to a bowl and top with mixed seeds, peanut butter, yoghurt and your chosen fruit.

  6. Serve immediately.

Note - This recipe serves 1 and is best enjoyed fresh. Stirring continuously after adding the egg is key to avoid scrambling and to create a smooth, creamy texture.
