Healthy Sweet Chilli Chicken Wrap (HC)
Ingredients
- 1 chicken fillet (approx 100-130g), bite-sized pieces
- ½ tsp garlic powder
- ½ tsp paprika
- Black pepper to taste
- 1 tsp tomato purée
- 1 tsp olive oil
For the sauce:
- 2 tbsp Greek yoghurt
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp honey
- ½ – 1 tsp sriracha sauce
- A drop of Worcestershire sauce (optional)
To serve (per portion):
- 1 wholemeal wrap
- Handful of lettuce
- ½ red onion, sliced
- 6 slices of cucumber
- 1 tomato, sliced
- 30g grated cheese
Instructions
Season the chicken with garlic powder, paprika and black pepper, then coat with the tomato purée.
Preheat a pan over medium heat and add olive oil.
Cook the chicken in the pan for 10–12 minutes, turning halfway, until fully cooked through. Remove from the heat and slice.
In a small bowl, mix together the Greek yoghurt, paprika, garlic powder, honey, sriracha (add amounts based on preference) and Worcestershire sauce until smooth. Taste test and adjust seasoning if needed.
Warm the wholemeal wrap in a pan.
Lay the wrap flat and add the lettuce, chicken, red onion, cucumber and tomato.
Sprinkle over the grated cheese, then drizzle with the sauce.
Wrap tightly and serve.
Note - This recipe serves 1 but can easily be doubled to make another portion for the next day. Store the chicken, sauce and salad ingredients separately in the fridge, then assemble fresh when ready to eat.
