Lasagne + Salad (HC)

Ingredients

  • 1 portion of good quality shop-bought lasagne (fresh or frozen) *

  • Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)

  • 1 tsp mayonnaise, salad cream or salad dressing

Note - You could also add additional meat or fish (e.g. prawns) if desired. Check the food swap list for portion sizes.

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months. Can be served hot or cold.

Examples of good quality shop-bought lasagne

Instructions

  1. Place the lasagne on a baking tray and cook in the oven according to the packet instructions, or microwave until heated through.

  2. While the lasagne is heating, prepare your side salad. Add mixed leaves, tomatoes, peppers, red onions, cucumber, or any other salad veg you like to a plate or bowl.

  3. Drizzle the salad with mayonnaise, salad cream or your preferred dressing.

  4. Serve the lasagne alongside the fresh salad and enjoy!

* Note - When picking a shop-bought lasagne, look for options that are:

  • Made with 100% beef, or plant-based mince rather than mixed or reformed meats

  • Have more green and amber traffic light labels, with fewer red (especially for saturated fat and salt)

  • Reasonable portion size (around 300–400g for a main meal)

  • Shorter ingredient lists – fewer additives, emulsifiers, and preservatives are better
