Honey Beef and Sweet Potato Bowl (HC)
Ingredients
160g sweet potato, cubed
1 tsp olive oil
½ tsp paprika
Pinch of black pepper, to taste
100g minced beef (or pork, turkey, chicken) – or 75g Quorn mince
1 tsp soy sauce (low sodium)
⅛ tsp chilli powder
100g full-fat cottage cheese
½ small avocado (or ¼ of a large avocado)
1 heaped tsp honey
Instructions
In a large bowl, toss the cubed sweet potato in a little olive oil, half of the paprika, and freshly ground black pepper.
Cook in the air fryer at 200°C for 15–20 minutes, or until golden and tender, shaking halfway through. Alternatively, roast in the oven at 200°C (180°C fan) for 25-30 minutes, if preferred.
Heat a non-stick pan over medium heat. Add the mince (or Quorn) and cook for 5–7 minutes until browned and cooked through.
Stir in the soy sauce and chilli powder. Cook for another 1–2 minutes, taste and add more seasoning if preferred.
In a serving bowl, add the cooked sweet potato, spiced mince, cottage cheese and sliced avocado.
Drizzle the honey over the top just before serving.
