Kefir Bircher Muesli

Ingredients

  • 1 apple, peeled and grated
  • 80g porridge / oats
  • 2 tsp maple syrup (or honey)
  • 125g plain kefir
  • 250ml milk (of your choice)
  • 2 tsp pumpkin seeds
  • 2 tsp sunflower seeds
  • 2 tsp flaxseeds
  • ½ tsp cinnamon
  • 60g raspberries

Instructions

  1. In a large bowl, combine the grated apple, oats, maple syrup, kefir, milk, seeds, cinnamon, and half the raspberries.

  2. Mix well, then divide the mixture between two containers or jars.

  3. Cover and refrigerate for at least 3 hours or overnight.

  4. Before serving, top with the remaining raspberries.

Note - This recipe makes 2 portions, store in the fridge for up to 3 days.
