Crispy Feta Eggs

Ingredients

  • ¼ tsp olive oil
  • 30g feta cheese, crumbled
  • 2 eggs
  • Pinch of dried oregano
  • Pinch of black pepper, to taste
  • Pinch of chilli flakes (optional)
  • A handful of baby spinach
  • 2 large tomatoes, quartered

Instructions

  1. Heat a small non-stick skillet over medium heat and lightly grease with the olive oil.

  2. For best results, cook the eggs one at a time. Sprinkle half the crumbled feta (about 15g) into a circle in the pan.

  3. Let it cook for 1 minute to begin crisping.

  4. Crack one egg into the centre of the feta circle and season with oregano, black pepper, and chilli flakes (if using).

  5. Cover the pan and cook until the egg is done to your liking and the feta is golden and crispy.

  6. Remove and repeat the process for the second egg.

  7. When both eggs are cooked, wilt the spinach and warm the tomatoes for 1–2 minutes.

  8. Serve everything together on a plate and enjoy immediately.
