Honey Chilli Noodles (HC)
Ingredients
- 50g whole-wheat noodles
- 1 teaspoon of olive oil
- ½ garlic clove
- ½ red pepper
- ½ tsp of ginger
- 4 baby corn
- 10 sugar snap peas
- 2 tablespoon of soy sauce
- 1 teaspoon of honey
- 1 teaspoon of chilli sauce
- 1 egg
- 20g or 1 bowl of spinach
- 1 teaspoon of sesame seeds (optional)
Instructions:
Begin by boiling the noodles according to the instructions on the packet.
In a frying pan add the olive oil, garlic,pepper and ginger.
Sauté for a few minutes while stirring it.
Add the baby corn and sugar snap peas, mix around.
Cook for 5 minutes on a medium heat.
Add the cooked noodles into the pan.
Add in the soy sauce, honey and chilli. Mix around. Taste test and add a little more flavour if required.
Prepare either a soft boiled or fried egg.
Add in the spinach and mix it around until it's wilted.
Plate noodles and add egg on top.
Top with a sprinkling of sesame seeds.
