Guacamole + Egg Breakfast Bowl

Ingredients

  • ½ small avocado (or ¼ large)
  • 1 spring onion, finely diced
  • 1 tbsp fresh coriander, chopped
  • Juice of ½ lime
  • Black pepper, to taste
  • 1 slice wholemeal bread (or sourdough)
  • 1 handful of baby spinach
  • 4-5 cherry tomatoes, halved
  • 2 eggs, boiled and peeled
  • 1 tbsp sour cream
  • 1 tsp chilli sauce (optional)

Instructions

  1. In a bowl, mash together the avocado, spring onion, coriander, lime juice and black pepper to make a chunky guacamole.

  2. Toast the bread to your liking.

  3. Add the spinach to the base of a bowl, then top with the cherry tomatoes, eggs (warm or cold), guacamole and sour cream.

  4. Drizzle over the chilli sauce if using and serve the toast on the side.

Note - In a rush? You could also use 2 tbsp of shop-bought guacamole.
