Cheesy Fried Eggs

Ingredients

  • 1 tsp olive oil
  • 2 eggs
  • Salt and pepper for seasoning
  • 30g cheddar cheese, grated

For the salad:

  • Handful of rocket
  • 6 cherry tomatoes, halved
  • ½ small avocado, sliced
  • 1 tsp balsamic vinegar (optional)
  • Or serve with any salad ingredients

Instructions

  1. Heat a non-stick frying pan over medium-low heat and add the olive oil.

  2. Crack the eggs into the pan and cook to your preference (sunny side up or over-easy).

  3. Season lightly with salt and pepper, then sprinkle the grated cheddar evenly over the eggs.

  4. Cover the pan with a lid for 30–60 seconds to allow the cheese to melt.

  5. Add the rocket, tomatoes, and avocado to a plate to create a simple side salad. Drizzle with balsamic vinegar if using.

  6. Once the eggs are cooked and the cheese has melted, carefully transfer them onto the plate.

  7. Serve immediately.
