Cheesy Fried Eggs (LC)
Ingredients
- 1 tsp olive oil
- 2 eggs
- Salt and pepper for seasoning
- 30g cheddar cheese, grated
For the salad:
- Handful of rocket
- 6 cherry tomatoes, halved
- ½ small avocado, sliced
- 1 tsp balsamic vinegar (optional)
- Or serve with any salad ingredients
Instructions
Heat a non-stick frying pan over medium-low heat and add the olive oil.
Crack the eggs into the pan and cook to your preference (sunny side up or over-easy).
Season lightly with salt and pepper, then sprinkle the grated cheddar evenly over the eggs.
Cover the pan with a lid for 30–60 seconds to allow the cheese to melt.
Add the rocket, tomatoes, and avocado to a plate to create a simple side salad. Drizzle with balsamic vinegar if using.
Once the eggs are cooked and the cheese has melted, carefully transfer them onto the plate.
Serve immediately.
