Banana & Cinnamon French Toast
Ingredients
- 1 egg
- 2 tbsp milk (of your choice)
- 1 tsp honey
- 1 tsp cinnamon
- ¼ tsp vanilla extract
- 1 tsp butter
- 1 slice wholemeal bread
- 1 heaped tbsp full-fat Greek yoghurt
- 1 banana, sliced
- 1 heaped tsp peanut butter
Instructions
In a shallow bowl, whisk together the egg, milk, honey, ½ tsp cinnamon, and vanilla extract until fully combined.
Heat the butter in a non-stick frying pan over medium-low heat.
Dip the slice of bread into the egg mixture, coating both sides evenly. Allow it to soak for 10–15 seconds, but avoid over-soaking.
Place the bread into the pan and cook for 2–3 minutes on each side, or until golden brown and cooked through.
Transfer to a plate.
Top with Greek yoghurt, banana and peanut butter.
Sprinkle over the remaining ½ tsp cinnamon.
Serve immediately.
