Banana & Cinnamon  French Toast

Ingredients

  • 1 egg
  • 2 tbsp milk (of your choice)
  • 1 tsp honey
  • 1 tsp cinnamon
  • ¼ tsp vanilla extract
  • 1 tsp butter
  • 1 slice wholemeal bread
  • 1 heaped tbsp full-fat Greek yoghurt
  • 1 banana, sliced
  • 1 heaped tsp peanut butter

Instructions

  1. In a shallow bowl, whisk together the egg, milk, honey, ½ tsp cinnamon, and vanilla extract until fully combined.

  2. Heat the butter in a non-stick frying pan over medium-low heat.

  3. Dip the slice of bread into the egg mixture, coating both sides evenly. Allow it to soak for 10–15 seconds, but avoid over-soaking.

  4. Place the bread into the pan and cook for 2–3 minutes on each side, or until golden brown and cooked through.

  5. Transfer to a plate.

  6. Top with Greek yoghurt, banana and peanut butter.

  7. Sprinkle over the remaining ½ tsp cinnamon.

  8. Serve immediately.
