Bruschetta Inspired Toast

Ingredients

  • 2 tomatoes, quartered

  • ¼ red pepper, finely diced

  • ½ tsp basil (or dried herbs)

  • 1 tbsp balsamic vinegar

  • Pinch of black pepper, to taste

  • ½ tsp olive oil

  • 1 egg

  • 1 slice of wholemeal bread

  • 1 tbsp (15g) cottage cheese

Instructions

  1. In a small bowl, combine the tomatoes, red pepper, basil, balsamic vinegar, and a little black pepper. Mix gently and set aside.

  2. Heat the olive oil in a small non-stick frying pan over medium heat. Crack in the egg and fry to your liking.

  3. Meanwhile, toast the wholemeal bread until golden.

  4. Spread the cottage cheese over the slice of toast, then spoon over the tomato and pepper mixture.

  5. Place the fried egg on top and finish with a little more freshly ground black pepper to taste then close the sandwich with the second slice of toast.

    Note - Swap cottage cheese for any other cheese, works with any kind of eggs (boiled, poached etc.).
