Broccoli, Pea and Ham Soup (MC)

Ingredients

  • 2 tsp olive oil
  • 1 small onion, diced
  • 1 clove garlic, crushed
  • 6 spears broccoli
  • 6 tbsp frozen peas
  • 2 medium potatoes (approx. 80g), sliced or cubed
  • 400ml water
  • 1 stock cube, low sodium
  • 1 tsp dill
  • 1 tsp basil, chopped
  • 100g ham, chopped

Instructions:

  1. Heat the oil in a pan.

  2. Add the onion and fry for 8 minutes until soft.

  3. Add the garlic and cook for a further 1 minute.

  4. Add the broccoli, peas, and potato, then add water and crush in the stock cube. Bring to the boil.

  5. Reduce the heat to a simmer, cover and cook for 25 minutes.

  6. Stir through the herbs, then blitz the soup with a blender until completely smooth.

  7. Stir in ½ (50g) of the chopped ham and serve.

Top Tip

 The recipe makes 2 portions, save the second portion for lunch tomorrow or pop in the freezer for another time.
