Peach Melba Pudding

Ingredients

  • 50g raspberries
  • 1 tsp honey
  • 125g full-fat Greek yoghurt
  • ⅓ tsp vanilla essence
  • 2 tsp chia seeds
  • 100g fresh or tinned peaches (in fruit juice, rinsed and drained)
  • 1 tbsp no-added-sugar muesli

Instructions:

  1. Add the raspberries, half of the honey to a food processor and blitz for a few seconds until you have a raspberry puree.

  2. In a bowl add the yoghurt, remaining honey, vanilla essence and chia seeds. Then mix.

  3. To serve, add the yoghurt mixture to a bowl and top with the peaches and muesli.

  4. Drizzle over the raspberry puree and enjoy.
