BBQ Chicken Pizza Topped Omelette (LC)
Ingredients
- 2 eggs
- Pinch of black pepper
- 1 tsp olive oil
- 1 tsp BBQ sauce
- 1-2 tbsp passata
- 30g cheese, grated
- 100g cooked chicken, diced or shredded
- ¼ red onion, finely sliced
- ½ red pepper, sliced
- Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
Instructions
Crack the eggs into a small bowl, add a pinch of black pepper and whisk well.
Heat a large non-stick frying pan over medium-low heat and lightly grease it with olive oil.
Pour the eggs into the pan and swirl to cover the base evenly.
Cook for 3–4 minutes, until set and golden on the bottom, then carefully flip the omelette using a spatula.
Preheat the grill.
Spread the BBQ sauce and passata over the surface of the omelette.
Sprinkle the grated cheese on top, then arrange the chicken, red onion, and red pepper.
Place under the grill for 3–4 minutes, or until the cheese has melted and the toppings are starting to soften.
Transfer the omelette to a plate and serve immediately with the mixed salad on the side.
