Whipped Feta and Peach Salad (LC)

Ingredients

  • 30g feta

  • 30g full-fat Greek yoghurt

  • 1 tsp extra virgin olive oil

  • Pinch of black pepper

  • 1 peach, sliced

  • 6 cherry tomatoes, halved

  • ½ red onion, finely sliced

  • 1 tsp balsamic vinegar

  • Large handful of rocket

  • 15g walnuts, chopped

Instructions

  1. Blend feta, Greek yoghurt, ½ tsp olive oil, and a pinch of black pepper in a food processor until smooth. Taste and adjust seasoning. Cover and chill in the fridge.

  2. In a bowl, combine the peach, cherry tomatoes, red onion, balsamic vinegar, ½ tsp olive oil, and a pinch of black pepper. Toss and set aside.

  3. Spread whipped feta on a plate or bowl. Top with the rocket, then the peach salad.

  4. Sprinkle with chopped walnuts before serving.
