Whipped Feta and Peach Salad (LC)
Ingredients
- 30g feta
- 30g full-fat Greek yoghurt
- 1 tsp extra virgin olive oil
- Pinch of black pepper
- 1 peach, sliced
- 6 cherry tomatoes, halved
- ½ red onion, finely sliced
- 1 tsp balsamic vinegar
- Large handful of rocket
- 15g walnuts, chopped
Instructions
Blend feta, Greek yoghurt, ½ tsp olive oil, and a pinch of black pepper in a food processor until smooth. Taste and adjust seasoning. Cover and chill in the fridge.
In a bowl, combine the peach, cherry tomatoes, red onion, balsamic vinegar, ½ tsp olive oil, and a pinch of black pepper. Toss and set aside.
Spread whipped feta on a plate or bowl. Top with the rocket, then the peach salad.
Sprinkle with chopped walnuts before serving.
