Strawberry Flaxseed Pudding
Ingredients
100g strawberries (fresh or frozen, defrosted)
1 tsp maple syrup (or honey)
125g full-fat Greek yoghurt
1 tbsp milled flaxseed
5ml milk (of your choice; optional)
Instructions
Add the strawberries (reserve a few for topping) to a bowl and mash with a fork.
Add the maple syrup, Greek yoghurt (reserve 1 tbsp for topping) and the milled flaxseed.
Mix well and refrigerate overnight.
In the morning, stir the pudding; you can add a splash of milk if the mixture is too thick.
Top with the reserved berries and the remaining Greek yoghurt
