Strawberry Flaxseed Pudding

Ingredients

  • 100g strawberries (fresh or frozen, defrosted)

  • 1 tsp maple syrup (or honey)

  • 125g full-fat Greek yoghurt

  • 1 tbsp milled flaxseed

  • 5ml milk (of your choice; optional)

Instructions

  1. Add the strawberries (reserve a few for topping) to a bowl and mash with a fork.

  2. Add the maple syrup, Greek yoghurt (reserve 1 tbsp for topping) and the milled flaxseed.

  3. Mix well and refrigerate overnight.

  4. In the morning, stir the pudding; you can add a splash of milk if the mixture is too thick.

  5. Top with the reserved berries and the remaining Greek yoghurt
