Watermelon & Feta Salad (LC)

Ingredients

  • Large handful of rocket
  • 1 tbsp fresh basil, chopped
  • 100g watermelon, cubed
  • 1 large tomato, diced
  • ¼ red onion, sliced
  • 30g feta, crumbled
  • 1 tbsp mixed seeds (sunflower or pumpkin seeds)

Dressing

  • 1 tsp extra virgin olive oil
  • ½ tsp dijon mustard
  • 1 tsp honey
  • 1 tsp lemon juice
  • Pinch of black pepper, to taste

Instructions

  1. In a large bowl, combine the rocket, basil, watermelon, tomato and red onion.

  2. In a small bowl or jar, whisk together the dressing ingredients. Taste test and adjust if necessary.

  3. Drizzle the dressing over the salad and toss gently to coat.

  4. Sprinkle over the crumbled feta and seeds.

  5. Serve immediately and enjoy!
