Warm Banana Split

Ingredients

  • 1 banana
  • ½ tsp olive oil
  • 1 tsp honey
  • Pinch of ground cinnamon
  • 3 tbsp full-fat Greek yoghurt
  • Handful of mixed berries, fresh or frozen, defrosted (approx.15; strawberries, raspberries, blueberries etc.)
  • 1 tbsp mixed nuts, chopped
  • 1 tbsp mixed seeds (sunflower or pumpkin seeds)

Instructions

  1. Slice the banana down the middle lengthwise.

  2. Heat the olive oil in a frying pan over medium heat.

  3. Add ½ tsp of honey and the cinnamon and stir to combine. Heat for a few seconds, then add the banana cut side down.

  4. Cook for 3-4 minutes or until the banana is caramelised.

  5. Place the banana on a plate.

  6. Spoon Greek yoghurt over the banana.

  7. Top with berries, nuts, seeds and the remaining honey.
