Ultimate Greek Salad (LC)
Ingredients
2 eggs
1⁄2 small red onion, diced
2 large tomatoes, sliced into chunks
1⁄2 red pepper, diced
½ cucumber, sliced into chunks
1 tsp extra virgin olive oil
Squeeze of lemon juice
Pinch black pepper, for seasoning
1⁄2 tsp oregano
1 tbsp fresh parsley, chopped (optional)
30g feta cheese, crumbled
Instructions
Boil eggs, allow to cool and then peel.
Add the vegetables to a bowl.
Add the olive oil, lemon juice, black pepper, oregano and fresh parsley. Mix well to coat the vegetables in the dressing.
Serve with sliced egg and crumbled feta.
