Ultimate Greek Salad

Ingredients

  • 2 eggs
  • 1⁄2 small red onion, diced
  • 2 large tomatoes, sliced into chunks
  • 1⁄2 red pepper, diced
  • ½ cucumber, sliced into chunks
  • 1 tsp extra virgin olive oil
  • Squeeze of lemon juice
  • Pinch black pepper, for seasoning
  • 1⁄2 tsp oregano
  • 1 tbsp fresh parsley, chopped (optional)
  • 30g feta cheese, crumbled 

Instructions

  1. Boil eggs, allow to cool and then peel.

  2. Add the vegetables to a bowl.

  3. Add the olive oil, lemon juice, black pepper, oregano and fresh parsley. Mix well to coat the vegetables in the dressing.

  4. Serve with sliced egg and crumbled feta.
