Tuna Nicoise (MC)

Ingredients

  • 4 small salad potatoes (approx. 80g)
  • 4 tbsp of green beans
  • 1 egg
  • 1 cup of rocket/mixed leaves
  • 4 sun dried tomatoes
  • 1 small onion
  • 1 tin of tuna in water, 80g
  • 1 tsp of olive oil
  • 1 tbsp of lemon juice
  • Black pepper for seasoning

Instructions:

  1. Boil potatoes and green beans.

  2. Hard boil and peel an egg.

  3. Add the rocket (argula), sun dried tomatoes and onion in a bowl. Then add the tuna to the salad and drizzle over some olive oil and lemon juice.

  4. Season with black pepper. Mix altogether.

  5. When potatoes and green beans are ready, allow to cool then add to the salad along with the egg on top.
