Toasted Sandwich and Salad (HC)

Ingredients

  • 2 slices of wholemeal bread
  • Large mixed salad (of your choice: mixed leaves, tomatoes, peppers, red onions, cucumber etc.)
  • 1 tbsp coleslaw

Ham, Cheese & Tomato Filling

  • 1 tsp butter
  • 2 slices of deli ham
  • 1 large tomato, sliced
  • 30g cheese, grated
  • Pinch of black pepper, to taste

Sweet Chilli Chicken Filling

  • 1 heaped tsp mayonnaise
  • 1 tsp sweet chilli sauce
  • 100g cooked/roasted chicken, diced or shredded
  • ½ red pepper, diced
  • 30g cheese, grated

Pesto, Halloumi & Tomato Filling

  • 1 heaped tsp pesto
  • 70g halloumi, sliced
  • 1 large tomato, sliced
  • Pinch of black pepper, to taste

Instructions

Ham, Cheese & Tomato filling

  1. Lightly toast the slices of wholemeal bread to your preference.

  2. Spread the butter evenly over each slice of toast.

  3. Layer the ham, tomato and cheese directly onto one slice of bread and season with black pepper.

  4. Place the second slice of bread on top, butter side down, and press gently.

  5. Slice in half and serve immediately with a large mixed salad and a spoonful of coleslaw.

Sweet Chilli Chicken Filling

  1. Lightly toast the slices of wholemeal bread to your preference.

  2. Combine all the filling ingredients in a small bowl.

  3. Spread the mixture evenly onto one slice of bread.

  4. Place the second slice of bread on top, butter side down, and press gently.

  5. Slice in half and serve immediately with a large mixed salad and a spoonful of coleslaw.

Pesto, Halloumi & Tomato Filling

  1. Lightly toast the slices of wholemeal bread to your preference.

  2. Spread the pesto evenly over each slice of toast.

  3. Layer the halloumi and tomato directly onto one slice of bread and season with black pepper.

  4. Place the second slice of bread on top, pesto side down, and press gently.

  5. Slice in half and serve immediately with a large mixed salad and a spoonful of coleslaw.

Note - Alternatively, you could make the toasted sandwich using a toasty maker or frying pan. Make the sandwich up without toasting the bread first, then use the toasty maker or frying pan until the bread is toasted and the filling is heated.
