Thai Chicken Mince Stir Fry (HC)
Ingredients
- 60g wholegrain rice
- 120g chicken mince
- ½ red pepper, finely diced
- 2 spring onions, sliced, white and green parts separated
- 80g green beans, trimmed and halved
- ½ tsp ginger powder
- ½ tsp garlic powder
- Black pepper, to taste
- 1 tbsp oyster sauce
- 1 heaped tbsp low-salt soy sauce
- 1 heaped tsp honey
- Small splash of water, optional
- Juice of ½ lime
- Small handful fresh basil, roughly torn
Instructions
Cook the wholegrain rice according to the packet instructions.
Meanwhile, heat a non-stick frying pan over a medium heat. Add the chicken mince and cook for approximately 4–5 minutes, breaking it apart as it cooks.
Add the red pepper and the white and pale-green parts of the spring onions. Cook until the vegetables have softened and the chicken is browned and completely cooked through.
While the mince and vegetables cook, bring a small saucepan of water to the boil. Add the green beans and cook for approximately 4–5 minutes, until tender with a little bite. Drain and set aside.
Add the ginger powder and garlic powder to the chicken. Season with black pepper, stir well and cook for approximately 30 seconds.
Add the oyster sauce, soy sauce and honey. Stir until everything is evenly coated.
Cook for another 2–3 minutes, until the sauce becomes slightly sticky. Add a small splash of water if the mixture becomes too dry.
Remove the pan from the heat. Add the lime juice and stir through most of the basil.
Serve with the wholegrain rice and green beans. Top with the remaining spring onion and basil.
Note - The chicken mince can be replaced with turkey, pork or lean beef mince. For a vegetarian option, use Quorn mince or crumbled tofu. Adjust the cooking time as needed and ensure meat is completely cooked through before serving.
Allow the cooked chicken mince, rice and green beans to cool before placing them in an airtight container. Store in the fridge for up to 2 days. Reheat thoroughly until piping hot throughout, adding a small splash of water if the mince or rice seems dry. Reheat only once.
