Frozen Chocolate Berry Crunch Bark

Ingredients

  • 400g mixed berries, (eg raspberries / blueberries)
  • 200g dark chocolate
  • 1 tbsp mixed seeds
  • 1 tbsp ground or milled flaxseed
  • 1 tbsp goji berries (or raisins)

Istructions:

  1. Line a baking tray or freezer-safe dish with baking paper.

  2. Wash the berries and dry them thoroughly. This will help the chocolate stick and prevent ice crystals from forming.

  3. Arrange the raspberries and blueberries closely together on the prepared tray. Gently press some of the berries down with the back of a spoon to help them hold together.

  4. Break the dark chocolate into a microwave-safe bowl. Microwave in 20–30-second intervals, stirring between each, until completely melted. Alternatively, melt it gently in a heatproof bowl over a pan of simmering water.

  5. Pour or drizzle the melted chocolate evenly over the berries. Make sure all of the berries are covered.

  6. Sprinkle over the mixed seeds, flaxseed and goji berries.

  7. Place in the freezer for 2–3 hours, or until completely firm.

  8. Break or slice into approximately eight portions. Allow it to sit at room temperature for a few minutes before eating.

Note: Store in an airtight container in the freezer for up to one month. Enjoy straight from the freezer after allowing it to soften slightly.
