Stacked Falafel Burgers (HC)
Ingredients
- 125g chickpeas, drained
- ½ red onion, diced
- 1 garlic clove, crushed
- 1 tsp ground cumin
- 1 tsp chilli flakes
- 1 tbsp plain flour
- 2 tbsp fresh parsley
- Salt and pepper
- 2 tsp olive oil
- ½ avocado
- ½ lime
- 2 tbsp red pepper hummus
- 2 brioche buns, sliced
- 2 slices of mature cheddar
- Handful of rocket
- 2 slices of tomato
Instructions
Add chickpeas, onion, garlic, cumin, chilli, flour, parsley and a pinch of salt and pepper to a food processor and pulse until combined.
Mould mixture into two burger shaped patties.
Heat a frying pan with olive oil.
Place falafel burgers into the pan and fry for 3-4 minutes on each side.
Whilst cooking, mash avocado with the juice of ½ a lime and season to taste.
Spread hummus on the bottom of each brioche bun then top with burger, cheese, rocket, tomato and avocado.
