Stacked Falafel Burgers

Ingredients

  • 125g chickpeas, drained
  • ½ red onion, diced
  • 1 garlic clove, crushed
  • 1 tsp ground cumin
  • 1 tsp chilli flakes
  • 1 tbsp plain flour
  • 2 tbsp fresh parsley
  • Salt and pepper
  • 2 tsp olive oil
  • ½ avocado
  • ½ lime
  • 2 tbsp red pepper hummus
  • 2 brioche buns, sliced
  • 2 slices of mature cheddar
  • Handful of rocket
  • 2 slices of tomato

Instructions

  1. Add chickpeas, onion, garlic, cumin, chilli, flour, parsley and a pinch of salt and pepper to a food processor and pulse until combined.

  2. Mould mixture into two burger shaped patties.

  3. Heat a frying pan with olive oil.

  4. Place falafel burgers into the pan and fry for 3-4 minutes on each side.

  5. Whilst cooking, mash avocado with the juice of ½ a lime and season to taste.

  6. Spread hummus on the bottom of each brioche bun then top with burger, cheese, rocket, tomato and avocado.
