High Fibre Air Fryer Granola

WLA Shift & Sustain Recipes - High Fibre Air Fryer Granola

Ingredients

  • 80g oats
  • 2 tbsp ground flaxseeds
  • 2 tbsp mixed seeds (pumpkin, sunflower etc.)
  • 60g mixed nuts, roughly chopped
  • 2 tbsp desiccated coconut
  • ½ tsp ground cinnamon
  • 20ml olive oil
  • 30ml honey
  • 1 tsp vanilla essence
  • 40g goji berries

To serve (per portion):

  • 125g full-fat Greek yoghurt
  • Fruit of your choice

Instructions

  1. Preheat the air fryer to 160°C.

  2. In a large mixing bowl, combine the oats, flaxseeds, mixed seeds, mixed nuts, desiccated coconut and cinnamon. Mix well to ensure an even distribution.

  3. Pour the olive oil, honey and vanilla essence into the dry ingredients and stir until everything is evenly coated.

  4. Line the air fryer basket with parchment paper and spread the granola mixture evenly (you may need to cook in batches depending on the size of your air fryer).

  5. Cook for 10–12 minutes, stirring every 2-3 minutes to ensure even cooking and to prevent burning.

  6. Once golden and slightly crisp, remove from the air fryer, add the goji berries to the granola and allow to cool completely, it will crisp up further as it cools.

  7. Serve each portion with Greek yoghurt and a portion of fruit of your choice.

Note - This recipe serves 4. Store any leftovers in an airtight container for up to 2 weeks.
