Smoked Salmon + Scrambled Egg Plate

Ingredients

  • 2 eggs

  • 1⁄2 tsp Italian herbs

  • Black pepper, for seasoning

  • ½ tbsp butter

  • A handful of baby spinach

  • 2 large tomatoes, quartered

  • 55g smoked salmon

  • Pinch of chilli flakes (optional)

Instructions

  1. Crack the eggs into a bowl, season with Italian herbs and black pepper, and beat lightly.

  2. Heat a non-stick pan over medium heat and add a small knob of the butter.

  3. Pour in the eggs and stir gently until just set and softly scrambled.

  4. In a separate pan, gently wilt the spinach and heat the tomatoes until just softened.

  5. Plate the scrambled eggs with the smoked salmon, wilted spinach, and warmed tomatoes.

  6. Season with extra black pepper and chilli flakes, if using.
